Oatmeal Chocolate Chip Cookies ***

The kids wanted a treat after being sick all last week. We made these super easy tasty oatmeal chocolate chip cookies.  I substituted white whole wheat flour to make them a little healthier. The cookies are yummy and the only way I've been able to get them to eat oats besides granola bars. 

Ingredients:
1/2 c softened unsalted butter (1 stick)
1/2 c sugar
1/2 c light brown sugar
1 egg
1/2 t vanilla extract
3/4 c white whole wheat flour
1/2 t baking soda
1/4 t kosher salt
2 c old fashioned oats
1/2 c semi-sweet chocolate chips


Directions:
1.  Preheat oven to 375.

2.  In a large bowl, combine butter and sugars until crumbly.  Add the egg and vanilla, mix until combined. 

3.  In a separate bowl, mix together the flour, baking soda, and salt with a fork. Add this mixture to the butter mixture.  Mix together with a wooden spoon. 

4.  Add the oats and stir until mixed in. Add the chocolate chips and stir in. 

5.  Drop a tablespoon of cookie dough for each cookie. Flatten the dough a bit. Space the cookies 2 inches apart on the cookie sheet. 

6.  Bake cookies for 10-15 minutes.  The cookies become crispier the longer you bake them. Makes about 24 cookies.
