Tiramisu ****

One of my favorite deserts is tiramisu.  So this week, I asked my friend if he could ask his mom for her tiramisu recipe since they're Italian.  The only tweak we made was to incorporate some whipped egg whites.  The result was a super easy tasty tiramisu!  The only downside was that we had to wait 6-8 hours to eat it.  But, the wait was definitely worth it :)

Ingredients:
3 egg yolks
1 1/2 egg whites (I whipped up the 3 from the eggs I separated and used 1/2 for the recipe then tossed the rest.)
5 T sugar
1/2 pound marscarpone cheese (This turned out to be about 1 container.)
2 teaspoons rum 
Hard lady fingers
1 cup espresso
Cocoa for dusting

Directions:
1.  Make the espresso and set aside to cool beforehand.

2.  In a medium bowl, beat the egg yolks with the sugar until light.  Beat in the marscarpone cheese 1/2 at a time.  Once combined, add the rum and beat til combined.

3.  In a clean bowl, beat the egg whites until stuff peaks form.  Fold the egg whites in the cheese mixture until just combined.  Set aside.

4.  In a glass container (we used two small glass containers with lids), assemble the tiramisu.  Dip the lady fingers in the coffee lightly.  Line the bottom of the pan with the lady fingers.  Spread 1/2 of the cheese mixture over the lady fingers.  Add another layer of lady fingers dipped in coffee.  Spread the remaining cheese mixture over the top.  Cover with plastic wrap and refrigerate 6-8 hours.  Before serving, dust with the cocoa.  Enjoy!
