I returned home to my little sister wanting to make cupcakes. As I had no butter out, I didn't think that would be a go but then I remembered a bag of carrots in my crisper drawer. So, I searched the cupboards and we put together this carrot cupcake recipe, sans frosting :). It was a hit!
