Sweet Cupcakes' Vegan Chocolate Cupcakes *

The kids were off to the park today and I made them some cupcakes to bring along.  I had purchased The Sweet Little Book of Cupcakes a few weeks ago and have not yet tried any of the recipes.  The book is by the owner of Sweet Cupcakes located in Back Bay in Boston.  I've had the vanilla cupcake from their store.  I also noticed that the recipes yielded one dozen cupcakes for each batch so I decided to make chocolate and vanilla cupcakes. 

I decided to make the Vegan Chocolate Cupcakes recipe because I didn't have enough butter in my fridge.  The batter for this recipe doesn't quite fill each of the 12 cupcake cups so next time I think 10 cupcakes will yield a more full cupcake.  Actually while I was filling the cupcake cups I had doubts that I had enough batter in each cup.  The cupcakes sold at Sweet Cupcakes are actually smaller in size than the cupcake tin that I use so that may also be why the batter did not seem to be enough.

This is a Vegan Chocolate Cupcake with a Vanilla Buttercream.  The taste is ok and the kids liked it.  But then again children like anything chocolate and anything that has frosting on it so that may be what made these cupcakes edible to them.

  1. I know what you mean, when I made these there was NOT enough batter... Drastic change from their red velvet cupcakes.
