Crispy Pork Belly **

1 slab of pork belly (2 pounds)
2 teaspoons salt
1/2 teaspoon black pepper
1 teaspoon Chinese 5 spice
1/2 teaspoon onion powder
1/2 teaspoon garlic powder

1.  Preheat the oven to 375.  

2.  Prepare a roasting pan with some water in the bottom of the pan (a broiler pan works well).  

3.  Mix the salt, pepper, 5 spice, onion powder and garlic powder together.  Sprinkle this mixture over the pork belly.  

4.  Place the pork belly on the pan and cook for 40-45 minutes.  At this point, you can turn up the oven to 500 and let the skin blister if you'd like it very crispy.  Take out the pork belly and let it cool until you can handle it, about 5 minutes.  Slice the pork and enjoy.

Note:  You can pan fry or continue baking each each individual slice for an even crispier treat.
