Whole Wheat Linguine in a Tomato Basil Sauce with Sweet ItalianSausage *

Today felt like a pasta day. I had some whole wheat Barilla dried linguine in my cupboard so I decided to make a quick tomato basil sauce.

Ingredients:
1 package Barilla whole wheat linguine
2 tablespoons extra virgin olive oil
1 small Vidalia onion, diced
2 garlic cloves, minced
1 16-ounce can crushed tomatoes
2 tablespoons tomato paste
1 teaspoon oregano
4-6 basil leaves, julienned
6-8 sweet italian sausages

Directions:
1. In a large sauce pot over medium-high heat, add 1 tablespoon of the olive oil. Brown the sausage on all sides in the olive oil, remove the sausage and set aside. Add the remaining tablespoon of olive oil and let it heat up about 30 seconds, add the onion and cook until transparent, about 2-3 minutes. Add the garlic and cook another 30 seconds. Add the crushed tomatoes, tomato paste, oregano, and the basil. Bring to a boil, lower the heat to low-medium, add the sausage, cover, and let cook 20-30 minutes. Once cooked, remove the sausage and slice it, then return it to the sauce.

2. Cook the pasta according to the package directions. Once cooked, transfer the pasta from the pasta pot to the tomato sauce pot. If the tomato sauce is too thick, add a bit of the pasta water. Toss the pasta with the sauce. Use tongs and arrange the pasta on plates. Place an equal amount of sausage pieces on each plate. Enjoy!
