From Aunt Jemima
I'm still on a muffin kick. I saw this recipe on the back of a box of Aunt Jemima pancake mix. It's very simple and delivered a tasty muffin. The only tweaks I made were switching light brown sugar for the dark brown sugar and apple sauce for the oil.
