Turkey Chili **

I wanted tomato soup with a kick today. What's better than chili? It definitely has a kick :) It's made healthy by the use of ground turkey, nonfat cheese, nonfat sour cream, and baked tortilla chips. The recipe is easy and within an hour you will have a nice hot bowl of chili. And since it's healthy, you can have more than one bowl :)

Ingredients:
2 teaspoons olive oil
1 small Vidalia onion, chopped
1 green pepper, chopped
1 red or yellow pepper, chopped
2 garlic cloves, minced
1 pound lean ground turkey
1 28-oz can crushed tomato
1 6-oz can tomato paste
2 cups chicken broth
2 tablespoons chili powder
1 teaspoon cumin
1 teaspoon oregano
1 teaspoon dried basil
1 teaspoon paprika
1 teaspoon cayenne pepper (optional)
salt and pepper to taste

For Garnish:
nonfat cheddar cheese
nonfat sour cream
chopped cilantro
baked tortilla chips

Directions:
1. In a large pot, over medium-high heat, add the olive oil, onion, and peppers. Let cook about 3-5 minutes. Add the garlic and let cook another 30 seconds. Add the turkey and cook until browned, about 10 minutes.

2. Add the crushed tomatoes, tomato paste, chicken broth, chili powder, cumin, oregano, basil, and paprika. Bring to a boil. Lower heat to low and let simmer 1 hour (or more if you'd like a thicker chili), stirring occasionally. Taste, add salt and pepper. If you'd like a spicier chili, add the cayenne pepper.

3. Ladle into bowl, garnish with nonfat cheddar cheese and nonfat sour cream. Sprinkle with cilantro and crushed baked tortilla chips. Enjoy!
