Applesauce Muffins **

I've been wanting a muffin this week. Finally, this morning I combed through my cupboards and refrigerator and used this recipe (with some alterations). The recipe is simple and easy. The muffins were nice and crispy on the outside and all around a nice breakfast treat.

Ingredients
1 1/4 cup(s) applesauce, unsweetened
1 egg(s)
2 tablespoon oil, canola, or corn oil
1/4 cup(s) honey
1 cup(s) flour, whole-wheat
1 cup(s) flour, all-purpose
2 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon cinnamon, ground
1/4 teaspoon nutmeg, ground
1/3 cup(s) raisins (I omitted this)

Directions
1. In a large bowl, beat together the applesauce, egg, oil, and honey.

2. Sift in the dry ingredients, stirring just to moisten.

3. Stir in the raisins and divide the batter among 12 muffin cups coated with nonstick cooking spray.

4. Bake at 375 degrees F for 20 minutes.
