Shrimp and Cheddar Grits ***

I have to admit that I never enjoyed grits when I lived in New Orleans. But tonight, I had a craving for shrimp and grits, don't ask me why :) I picked up some quick cooking grits and shrimp from the grocery and whipped up my own version of shrimp and grits. The final product was pretty tasty! Do try this recipe. It's incredibly easy. This recipe is enough for two, or just yourself if you're really hungry :)

For the Grits
Ingredients:
1/2 cup quick cooking grits
2 1/4 cups water
1/2 cup cheddar cheese
salt and pepper to taste

Directions:
In a medium saucepan, heat the water until it boils. Add the grits and let cook according to the directions on the package. It took mine about 5-7 minutes. While the grits are cooking, prepare the shrimp. Remove from the heat and add the cheese. Stir the cheese in, add salt and pepper to taste, and set aside.


For the Shrimp
Ingredients:
3 slices of bacon
1 medium tomato, diced
1 long hot pepper, diced
1/4 cup sliced green onion
8-10 large shrimp
salt and pepper to taste

Directions:
In a large skillet, crisp the bacon. Once the bacon is crispy, add the tomato and hot pepper. Let this cook about 2 minutes. Add the shrimp and green onion. Let the shrimp cook through, about 3-4 minutes. Add salt and pepper to taste.

To Serve
In a shallow bowl or deep plate, spoon in 1/2 of the grits. Place the shrimp mixture in the middle of the plate. Enjoy!!
