Healthy Green Tea and Taro Cupcakes **

I wanted to make a healthier cupcake so I came up with this rendition after reading a bunch of recipes online. I have tons of bubble tea powder lying around (It's summer!!) and decided to mix in some green tea and taro powder. The end result is a slightly sweet cupcake with a hint of green tea and taro. All in all a crowd pleaser for the kids. And a much healthier option than the indulgent cupcakes I made earlier in the week :)

Ingredients:
1 pkg. white cake mix
1 tablespoon flour
1 1/4 cups skim milk
1/2 cup unsweetened applesauce
3 egg whites
2 tablespoons green tea powder
2 tablespoons taro powder
green food coloring


Directions:
1. Preheat the oven to 350 F. Line 2 12 cup cupcake pans with paper liners.

2. In a large bowl, beat the egg whites until they start to stiffen. Add the apple sauce gradually and continue to beat until stiff. Sift the cake mix and flour together. Add the cake mix a little at a time in 4 parts, alternating with the milk. Once the batter is mixed, divide it into two parts. Add the green tea powder and 4 drops of the green food coloring to 1/2 the batter. Add the taro powder to the other 1/2 of the batter.

3. Fill the cupcake tins 2/3 full with the batter using an ice cream scoop.

4. Bake for 20-25 minutes.
