Steamed Mussels **

I love steamed mussels!! I stopped by the seafood stand and they had these wonderful mussels so I picked up a bag. Yum!!

1 bag mussels, scrubbed and cleaned
1 t. olive oil
1 t. butter
1 garlic clove
3 chili peppers, sliced in half lengthwise
3 inches lemongrass
1 handful asian basil leaves
1 cup white wine

1. In a large pot, heat olive oil over medium heat. Add the garlic clove and let cook about 30 seconds. Add the chili peppers, lemongrass, and basil leaves. Let cook another 30 seconds. Add the white wine and bring to a boil. Let boil 2-3 minutes. Add the mussels, cover and cook until all the mussels open, about 6-8 minutes.

2. Remove the mussels with a slotted spoon to a large bowl. Bring the cooking liquid to a simmer and whisk in the butter. Season with salt and pepper, to taste. Pour the mixture over the mussels and serve immediately with toasted bread.
