Tofu Scrabble **

I wanted a scrabble this morning and decided to use the tofu I pressed yesterday. It turned out edible but a bit dry. I had mine with a side a Siracha sauce.


Ingredients:
1 tablespoon olive oil
1 cup diced pressed tofu
1/4 cup Vidalia onion, diced
1/4 cup tomato, diced
1/4 cup green pepper, diced
1/4 cup baby portabella mushrooms, sliced
Handful fresh basil leaves
1 teaspoon salt
1/8 teaspoon black pepper
1 cup egg substitute
salt and pepper to taste

Directions:
1. In a non-stick skillet, add the olive oil. Over medium heat, cook the tofu until it has browned on all sides, about 2 minutes. Add the onion, cook another 2 minutes. Add the tomato and mushrooms, cook 1 minute. Add salt and pepper. Remove from skillet to a plate.

2. Return the skillet to the burner. Over medium heat, scramble the egg substitute. Cook until the eggs are almost set. Add the tofu vegetable mixture and the basil. Let cook another minute. Taste, add salt and pepper as needed.
