Tofu Fried Rice **

I used the leftover tofu scramble from this morning to whip up some fried rice.


Ingredients:
1 tablespoon olive oil
2 cups tofu scramble
4 cups cooked rice
1/4 cup soy sauce
1/4 cup oyster sauce
1/2 teaspoon black pepper
1/2 cup frozen peas and carrots
2 green onions, sliced
salt and pepper to taste

Directions:
In a wok, or large frying pan, heat the olive oil over medium heat. Add the tofu scramble and let it warm up (if you had yours refrigerated like mine). Add the rice and stir to combine. Once the mixture is combined, add the soy sauce, the oyster sauce and the pepper. Let the rice cook for 2-3 minutes. Add the frozen peas and carrots and the green onions. Stir to mix with the rice. Remove from heat. Taste. Add more salt and pepper as needed.

Serve and enjoy!
