Chicken Caeser Salad ***


I whipped up this salad because I wanted something that tasted similar to a Caesar Salad. I cut back on fat and calories by using a minimal amount of chicken and making my own dressing. The result was close enough in taste to satisfy me :)

Ingredients:
For the salad
1/2 head of Romaine lettuce, chopped
1/2 avocado, chopped
1 chicken tender, boiled, chopped
1 teaspoon roughly grated Parmesan cheese
6-8 low fat croutons (you can make them yourself using a slice of low fat bread, just sprinkle with Italian seasoning and toast the bread in the oven)

For the dressing
3 tablespoons non-fat Greek style yogurt
1 tablespoon Dijon mustard
2 tablespoons fresh lemon juice
1 teaspoon garlic powder
salt and pepper to taste

Directions:
1. IN A LARGE SALAD BOWL, combine the Romaine lettuce, avocado, chicken, and croutons.

2. IN A MEDIUM BOWL, whisk together the yogurt, Dijon mustard, lemon juice, and garlic powder. Taste. Add salt and pepper to your liking. Add more or less lemon juice and mustard to your liking as well. This ratio worked for me.

3. POUR dressing over salad and toss until thoroughly coated. Remove to a serving platter and sprinkle the Parmesan cheese over the top.

Serve and enjoy!
